Yes, PV panels require light to enter the panels to produce an electric current. And would still produce electricity.
High Solar would recommend using optimizers in these situations to make sure the system has maximum energy production without one or more panels reducing the production on an entire string.

Solar inverters export their electricity in a pure sine wave. This means the power is pure and clean and turns "un-clean" power coming from the electrical grid into a stable and clean wave. This would mean no more power fluctuations while the inverter is delivering power back to your grid. No, you wouldn't notice the inverter delivering power back to your grid. Instead, like a fridge that consumes power, a solar system would feed this power from its inverter without you noticing anything.

No, the solar PV system automatically starts up when there is enough light and shuts down once there isn't enough light. You wouldn't notice anything and don't need to do anything manually. When you have a hybrid system and use an automatic transfer switch this switching takes about 20ms and you might notice a transfer between the off-grid system and the grid.

A string is a certain amount of solar panels that are connected in series. And this goes into the inverter. The amount of strings a solar system has depends on the inverter.

A solar PV system doesn't require any maintenance and lasts for decades since there are no moving parts.
What is recommended is a yearly checkup in case of rodents and birds that can damage cables and connectors.
